Guilt-Free Lemon Zest Strawberry Shortcake

I whipped this up the other night and I can't complain! It was a tasty, summer time treat!


Shortcake Ingredients:

  • 1 scoop vanilla Shakeology

  • 1 egg

  • 2 Tbsp water or almond milk (I used almond milk)

  • 2 tsp lemon extract

  • 1 tsp lemon zest (optional)

  • 1/4 tsp baking powder



Whipped Topping:

  • 1 egg white

  • 1 Tbsp almond milk

  • 1 tsp vanilla

  • 1 tsp honey

  • 1 Tbsp vanilla Greek yogurt (optional)

Strawberry Mixture:

  • 1 cup sliced strawberries

  • 1 tsp honey

Instructions:

  1. Mix together Shakeology and baking powder, then add egg, water/milk, and lemon extract. Mix thoroughly until smooth. Microwave for 1 - 2 minutes depending on your microwave.

  2. Place egg white, milk, vanilla, honey in a large bowl, blend on high for 3-5 minutes. Add vanilla Greek yogurt for additional sweetness. Blend until light and fluffy!

  3. Combine the strawberries and honey together! That's a hard step, right...?

  4. Cut the Shakeology cake in half and layer with strawberries and whipped topping! Enjoy!
