Are most of you like me, can't say no to a good dessert? The problem is that I am not a baker by any means.
It's an exact science, you can't just wing it and hope it turns out. Plus, it can take quite a bit of time and skill depending on what you’re cooking. It's one of those things you need to enjoy doing and honestly for that reason I usually just buy my baked goods. BUT this era of mug cakes, now that’s a style of baking I can get on board with.
I was so happy when I found this recipe. There have been so many brownie, cookie or basic cake in a mug recipes everywhere. I love that this one gives the essence of apple pie AND it’s made healthier with the Shakeology. A win win in my book.
Ingredients
Nonstick cooking spray
1 large egg
⅓ cup / 80 g unsweetened applesauce
1 scoop Vanilla Shakeology
½ small apple, chopped
¼ tsp. apple pie spice (or ground cinnamon)
¼ tsp. butter extract
¼ tsp. pure vanilla extract
Instructions
Coat the inside of a microwave-safe mug with spray.
Add egg to mug; lightly beat with fork. Add applesauce, Shakeology, apple, apple pie spice, butter extract, and vanilla extract; stir until well incorporated.
Microwave on high for 2 to 3 minutes. Serve warm.
