Chocolate Shakeology Nice Cream

Daylight saving is this week which means sunny warmer days are right around the corneršŸ¤ž All this thought of sunshineā˜€ļø and spring has got ice creamšŸ¦ on my mind!


Is there a better treat at the end of a beautiful day then ice cream? There is, this healthier version with an added bonus, zucchini. So seriously, you could enjoy this every single night guilt free and still be reaching your health and fitness goals!

So try it out and even jazz it up some more- top with berries, experiment with other shakeology flavors, the options are endless. Even more reasons to love this recipe.


Ingredients

  • Nonstick cooking spray

  • Ā½ medium zucchini, chopped

  • 1 scoop Chocolate Shakeology

  • 2 Tbsp. unsweetened almond milk

  • 1 Tbsp. unsweetened cocoa powder

  • 1 tsp. pure vanilla extract


Instructions

  1. Lightly coat a small baking sheet with spray. Arrange zucchini in an even layer; freeze until solid, about 4 hours.

  2. Add zucchini, Shakeology, almond milk, cocoa powder, and extract to a high-powered blender (or small food processor); cover. Blend until very smooth, scraping down sides as needed. Add more almond milk, 1 Tbsp. at a time, if needed.

  3. Serve immediately or freeze in an airtight container for up to 2 weeks. If frozen, allow to thaw for a few minutes before serving.
