Coffee and Cereal Bars

I think it's about that time in the week, where all us mommas are dreaming of sleeping in and being served breakfast in bed on Sunday morning for Mother's Day... 😴But then we're hit with a ball to nose by our toddler or slapped with another sideways comment from our teens to wake-us from that day dream! I LOVE being a mom, but is that breakfast in bed thing real?! Does it exist for anyone?! I sure hope so....


Anyway, if you're not counting on breakfast in bed on Sunday, but you want to TREAT YO' SELF (as you should) try making these Coffee and Cereal Bars! First, they are NO BAKE! Which means less work for you! Second, they are COFFEE flavored, which guarantees my kiddos won't be eating them! And they are even HEALTHY! So I can enjoy dessert in bed later that night... 💭🤔Oh wait, was that a day dream too....?!


pineapple mango smoothie

Ingredients:

  • 4 pitted dates

  • ¼ cup + 1 Tbsp. / 80 g all-natural almond butter

  • 1 scoop / 40 g Café Latte Whey (or Café Latte Plant-Based Vegan) Shakeology

  • 2 Tbsp. unsweetened almond milk

  • 1 cup / 75 g high-fiber cereal flakes

  • ¼ cup / 5 g freeze-dried strawberries

Instructions:

  1. Line a loaf pan with parchment paper; set aside.

  2. Place dates, almond butter, Shakeology, and almond milk in a food processor; pulse until well combined.

  3. Add cereal; pulse until just mixed and large flakes of cereal remain.

  4. Firmly press cereal mixture into prepared pan; press strawberries into top in a single layer. Freeze for at least 1 hour; cut into 6 equal portions. Store refrigerated in an airtight container for up to 4 days.
