No-Bake Shakeology Breakfast Cookies

Okay, yeah, I'm still on a cookie kick post-holidays.... šŸŖ BUT I'm working to incorporate better-for-me recipes to continue to eat delicious cookies without falling off the wagon! So today's recipe is a little less decadent than the last that I shared - but that's because you can eat this cookie for breakfast! YUM! Who doesn't love dessert for breakfast? Plus, can you say "CROWD PLEASER?" šŸ™Œ Imagine telling your kiddos one morning that you're all eating cookies for breakfast. #Winning! šŸ˜

Ingredients:

  • Ā½ cup all-natural peanut butter

  • Ā¼ cup honey

  • 1 tsp. pure vanilla extract

  • 3 Tbsp. chia seeds

  • 3 Tbsp. pumpkin seeds

  • 2 Tbsp. unsweetened shredded coconut

  • Ā½ cup quick-cooking rolled oats

  • Ā¼ cup dried fruit, such as unsweetened cranberries, unsweetened cherries, raisins, or apricots

  • Ā½ cup Vanilla Whey Shakeology (approx. 1 Ā½ scoops)

Instructions:

  1. Place peanut butter and honey in a large microwave-safe bowl. Microwave on 100% for 20 seconds; mix well with clean hands (or a rubber spatula).

  2. Add extract, chia seeds, pumpkin seeds, coconut, oats, dried fruit, and Shakeology; mix well with clean hands (or a rubber spatula).

  3. Roll mixture into eight large balls, each about 2-inches in size.

  4. Flatten each slightly so that it is shaped like a traditional cookie.

  5. Refrigerate for at least one hour before serving.

  6. Serve immediately, or store in an airtight container in the refrigerator for up to five days.
